Harvesting Location:
Stone crab claws are primarily harvested from the waters of Florida, with the most significant commercial harvesting taking place in the Gulf of Mexico, particularly along the Florida Gulf Coast. This includes areas like Tampa Bay, St. Petersburg, and the Florida Keys.

The region’s warm waters and rich marine ecosystems provide an ideal environment for stone crabs to thrive.

Harvesting Process:
The crabs are sustainably harvested by licensed fishermen who remove only the claws, ensuring the crabs can survive and regenerate new ones.

After being caught, the claws are carefully processed and flash frozen to preserve freshness before being shipped to customers nationwide.

Stone crab claws come in various sizes: medium, large, jumbo, colossal, etc. Larger claws weigh more and may mean fewer claws per serving. A good rule of thumb is to allow about ½ to ¾ pound of claws (including the shell) per person for a meal.
