We responsibly source our lobsters directly from independently owned wharfs, some just a few miles from our headquarters here in Maine and others all along the North Atlantic coast. Each day the docks trace their landings to every lobsterman and woman who catches them, and we trace our lobsters to every dock where they landed.

Generally speaking, you should expect to get 50% of cooked lobster tail meat out of every raw lobster tail once cooked, so you can expect about 3 ounces of meat per 6 ounce lobster tail. We recommend 6-8 ounces of cooked meat per person so we recommend two 6 ounce raw lobster tails per person.

Maine Lobster Now offers next-day delivery for orders placed Monday through Friday by 8AM ET, with delivery available Tuesday through Saturday. Frozen lobster tails should be thawed in the refrigerator for 24 hours to prevent the meat from sticking to the shell. It’s important to cook the tails within 2 days of thawing to ensure freshness. Never thaw a lobster tail in warm water or at room temperature, as this can affect the quality. If the lobster is not properly thawed before cooking, the meat can become tough and may stick to the shell, leading to a less enjoyable dining experience.
